Authentic Gujarati Dhokla Recipe (Soft & Spongy)
Gujarati Khaman Dhokla is a soft, spongy, and delicious steamed savory cake made from gram flour (besan). It is light, fluffy, and has a perfect balance of tangy and slightly sweet flavors. Follow this step-by-step recipe to make authentic Gujarati-style Dhokla at home!
📝 Ingredients:
For Dhokla Batter:
✔️ 1 cup Besan (Gram Flour)
✔️ 1 tbsp Semolina (Rava/Sooji) – for texture (Optional)
✔️ 1 tbsp Lemon Juice
✔️ 1 tsp Sugar
✔️ ½ tsp Turmeric Powder
✔️ 1 tsp Green Chili-Ginger Paste
✔️ ½ tsp Salt (or as per taste)
✔️ ¾ cup Water (Adjust as needed)
✔️ 1 tsp Eno Fruit Salt (or ½ tsp Baking Soda)
✔️ 1 tbsp Oil
For Tempering (Tadka):
✔️ 1 tbsp Oil
✔️ 1 tsp Mustard Seeds (Rai)
✔️ 1 tsp Sesame Seeds (Til)
✔️ 1-2 Green Chilies (Slit)
✔️ 8-10 Curry Leaves
✔️ ½ cup Water
✔️ 1 tbsp Sugar
✔️ 1 tbsp Lemon Juice
For Garnishing:
✔️ 2 tbsp Fresh Coriander (Chopped)
✔️ 2 tbsp Grated Coconut (Optional)
📌 Step-by-Step Method:
Step 1: Prepare the Dhokla Batter
1️⃣ In a large mixing bowl, sieve the besan to avoid lumps.
2️⃣ Add semolina, turmeric powder, salt, sugar, and green chili-ginger paste.
3️⃣ Slowly add water and whisk until you get a smooth, lump-free batter.
4️⃣ Add lemon juice and oil and mix well.
5️⃣ Cover and let the batter rest for 10-15 minutes.
Step 2: Steaming the Dhokla
6️⃣ Just before steaming, add 1 tsp Eno (or baking soda) and 1 tbsp water over it.
7️⃣ Mix quickly in one direction. The batter will turn light and fluffy.
8️⃣ Grease a steamer tray or plate with oil and pour the batter evenly.
9️⃣ Heat water in a steamer or large pot and place the plate inside.
🔟 Cover and steam for 15-20 minutes on medium heat.

4️⃣ Add ½ cup water, sugar, and lemon juice, and let it simmer for 1-2 minutes.
5️⃣ Pour this hot tempering evenly over the steamed dhokla.

1️⃣ Let the dhokla cool for 5 minutes before cutting into squares.
2️⃣ Garnish with chopped coriander leaves and grated coconut.
