Recipe for Sev Usal Pav (Street Style):


Ingredients:


For Usal:


1 cup dried white peas (soaked overnight)

2 tbsp oil

1 tsp mustard seeds

1 tsp cumin seeds

1 onion (chopped)

1 tomato (chopped)

1 tbsp ginger-garlic paste

1 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

Salt to taste

3 cups water

For Garnishing:


1 cup sev

Chopped onion

Chopped coriander leaves

Lemon wedges

Tamarind chutney

Green chutney

For Serving:


Pav (buttered and toasted on tawa)


Steps:


Boil the soaked white peas until soft.

Heat oil in a pan, add mustard and cumin seeds, let them splutter.

Add chopped onions and sauté until golden. Add ginger-garlic paste and sauté further.

Mix in tomatoes, turmeric, chili powder, coriander powder, and salt. Cook until tomatoes soften.

Add boiled peas along with water to make a gravy. Let it simmer for 10–15 minutes.


Assemble by adding the hot usal to a bowl, garnish with sev, chopped onion, coriander, and chutneys.

Serve with buttered pav and a squeeze of lemon for a zesty punch!
