Dhokla is a savory, spongy snack that originates from the state of Gujarat in India. It's made from a fermented batter of rice and chickpea flour (besan), which is steamed to create its characteristic soft and fluffy texture. The batter is often flavored with spices like mustard seeds, cumin, green chilies, ginger, and turmeric, giving it a tangy and mildly spicy taste.
The dish is typically served with a variety of accompaniments, such as green chutney (made with cilantro and mint) or tamarind chutney, which enhances its flavor. A popular breakfast or tea-time snack, dhokla is also enjoyed as a light lunch or dinner. Its bright yellow color comes from turmeric, and it's garnished with fresh coriander leaves and a tempering (tadka) of mustard seeds, sesame seeds, curry leaves, and sometimes a sprinkle of grated coconut.
It's commonly made fresh and eaten warm but can also be enjoyed cold, making it a versatile and refreshing dish.
