Recipe for Dal Paniya Thali:
Ingredients:
For Dal:
1 cup Toor Dal (Pigeon Pea Lentils)
2 tbsp Ghee
1 tsp Mustard Seeds
1 tsp Cumin Seeds
2 Green Chilies (slit)
1 medium Onion (chopped)
2 medium Tomatoes (chopped)
1 tsp Turmeric Powder
1 tsp Red Chili Powder
1 tsp Garam Masala
1 tbsp Coriander Powder
Salt to taste
Fresh Coriander Leaves for garnish
For Paniya (Millet Bread):
2 cups Bajra (Pearl Millet) Flour
1/2 tsp Salt
Lukewarm water (as required for kneading)
Ghee for roasting
Extras for Thali:
Seasonal veggies (spiced and sautéed)
Sweet dish (e.g., halwa)
Green chutney and pickles
Buttermilk
Instructions:
1. For Dal:
Wash and pressure cook the dal with turmeric and water until soft.
Heat ghee in a pan, add mustard and cumin seeds. Once they splutter, add green chilies and onions. Sauté until golden.
Add tomatoes, spices, and salt. Cook until the tomatoes are soft.
Mix in the cooked dal and simmer for 10 minutes. Garnish with coriander.
2. For Paniya:
Mix bajra flour, salt, and water to form a soft dough.
Take a small portion, flatten it into a disc, and roast on a clay tandoor or tava. Apply ghee and cook on both sides until golden.
3. Assemble the Thali:
Serve hot dal with paniya, sautéed veggies, sweet dish, chutneys, and buttermilk on a banana leaf or plate.
